The Ketogenic Diet

The ketogenic diet is high fat, moderate protein and low carbohydrate. Its main health benefits include weight loss, less hunger, blood sugar control and lower triglycerides.

The keto net carb diet limits daily carbohydrate consumption to 20-50 grams to induce ketosis. Ketosis is a state where the body changes from using glucose as its primary energy source to using ketones created from fat metabolism. Generally, popular ketogenic resources suggest an average of 70-80% fat from total daily calories, 5-10% carbohydrate, and 10-20% protein.

One of the most important takeaways about the ketogenic diet is that only net carbs are counted when calculating your daily consumption.

The main difference between keto and traditional ice cream is that keto ice cream is low in carbohydrates (especially sugars). Sugar alcohols are used to add sweetening and anti-freezing power in keto ice cream. These are zero/low-calorie sweeteners like erythritol, xylitol, maltitol and sorbitol. Stevia and monkfruit are usually used to sweeten the final product (they do not add anti-freezing power). These alternative sweeteners don’t spike blood sugar, which would then kick people out of ketosis.

Developing a Keto Ice Cream Recipe

Not all keto ice creams are equally created. In general, customers want a product that has fewer than 10 grams of net carbs per serving (60 grams of ice cream). That’s to keep them in ketosis so they can continue burning fat on the diet.

So when we develop a keto ice cream, we must consider the following values (per serving):

    • Net Carbs (total carbs – fibers – sugar alcohols)

    • Total Calories

    • Composition of Calories per macro (protein, fat, carbohydrate)

We also must consider a 10-20% fat, 2-5% protein, and less than 10% net carbs.
